Red Velvet Cake for 2

Feeling a bit inspired by yesterdays experiment with the chocolate cake in a coffee mug just for fun I decided to create my own variation for you to try. I promise to get back to serious baking after this.

Red Velvet Cake for 2

































Ingredients

2 coffee mugs
4 tablespoons plain flour
4 tablespoons sugar
1 tablespoons baking cocoa
1/4 teaspoon bicarbonate of soda
1 egg
2 tablespoons buttermilk
1 tablespoon sourcream
3 tablespoons melted butter
Small splash of vanilla
1/4 teaspoon Red Food Colouring

For the topping

4 tablespoons icing sugar
2 tablespoons Cream cheese


Method

Add dry ingredients to mug and mix well
Add egg and mix
Add buttermilk, sourcream and butter and mix well
Add vanilla and mix

**Cake mixture can be divided up into cupcake cases or a small baking tin and baked in the oven**



 or try the following method:


Divide mixture between 2 coffee mugs. 


Cook one mug at a time in microwave for up to 1 minute each (1000 watt microwave), you will need to adjust this cooking time according to your microwave. 

I have a 1000 watt microwave and mine was done in 1 minute

Cake will rise above the top of the mug, this is normal.

Remove and allow to cool then tip out onto a plate. 

I didn't use any grease or flour in my mug and the cake tipped out easily after cooling for a couple of minutes. 

Top with Cream cheese Icing.
